Antipasto Salad Recipe

Makes: 8 servings

8 cups romaine lettuce
1 cup non/lowfat grated cheese
3 ounces 95% fat-free turkey pastrami
1 red pepper, cut into strips
1/4 cup red onion, cut into thin strips
3/4 cup garbanzo beans (reduced-sodium)
1 cup tomatoes, diced
8 Greek salad peppers
6 black olives (optional)

- Arrange the lettuce over the bottom of a bowl, and sprinkle with the cheese.
- Cut the turkey pastrami into thin strips, and arrange over the cheese.
- Spread the red pepper and onion over the top.
- Spread the garbanzo beans, tomatoes, salad peppers, and olives on top of the lettuce.
- Serve with non/lowfat Italian dressing.
