Fruited Shrimp Salad Recipe

3 cups water

1 pound shrimp, large, unpeeled

16 ounces pineapple tidbits in juice -- drained

11 ounces mandarin oranges in juice -- drained

1/2 cup chopped celery

3 tablespoons mayonnaise

1 1/2 teaspoons lemon juice

Bibb lettuce leaves

Bring water to a boil; add shrimp, and cook 3 to 5 minutes. Drain well; rinse with cold water. Chill. Peel and devein shrimp.

Combine shrimp, pineapple, mandarin oranges, celery, mayonnaise, and lemon juice, tossing gently; chill. Serve on lettuce leaves. Yield: 3 servings.
