Italian Green Bean Salad Recipe
2 boxes frozen French style green beans
1 small onion -- chopped
6 tablespoons olive oil
2 tablespoons wine vinegar
1 teaspoon Dijon mustard
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup Parmesan cheese
Cook beans until barely tender. Drain well and cool.
Add onions and toss to mix. Mix ingredients for dressing in a small bowl.
Pour over beans along with Parmesan cheese and toss to mix well.
Arrange on a bed of lettuce and garnish with tomatoes, olives and anchovies.
