Serves: 2 Ingredients: 8 oz. canned sweet potatoes, mashed 6 tbsp. egg substitute 1/4 cup brown sugar 2 tbsp. corn flake crumbs 8 oz. crushed pineapple in juice Directions: . Lightly spray toaster oven baking dish with nonfat cooking spray. . Combine mashed sweet potatoes, egg substitute, sugar and pineapple in baking dish and mix until blended. . Sprinkle top with corn flake crumbs and bake in 350 degree toaster oven 40-45 minutes, until heated through.
